- 1/2 cup molasses

- 1 teaspoon baking soda
- 1 package cream cheese
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and a pinch of salt.
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the molasses and vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Cover the dough in plastic wrap and refrigerate for at least an hour.
- Scoop out tablespoons of dough, roll them into balls, and flatten slightly. Bake for 8-10 minutes.
- Allow cookies to cool, then spread a layer of cream cheese frosting between two cookies.
Notes
For a gluten-free version, consider using almond or coconut flour. These cookies freeze well; store in an airtight container with parchment paper between layers.
