Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and a pinch of salt.
  3. Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the molasses and vanilla extract until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Cover the dough in plastic wrap and refrigerate for at least an hour.
  7. Scoop out tablespoons of dough, roll them into balls, and flatten slightly. Bake for 8-10 minutes.
  8. Allow cookies to cool, then spread a layer of cream cheese frosting between two cookies.
