- 4 boneless chicken thighs or breasts
- 1 can (28 oz) crushed tomatoes
- 4 cloves garlic, minced
- 1 large sweet onion, chopped
- 1–2 tsp red pepper flakes (adjust to taste)
- 2 tbsp olive oil
- 1/2 cup white wine (optional)
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions and cook until soft and translucent.
- Stir in garlic and red pepper flakes, cooking until fragrant.
- Season chicken with salt and pepper, then add to the skillet and sear on one side until golden brown.
- Flip chicken and pour in crushed tomatoes and white wine. Stir to combine, scraping up brown bits from the pan.
- Bring sauce to a boil, then reduce heat and let simmer for 25-30 minutes.
- Before serving, stir in fresh basil and parsley, adjusting seasoning as desired.
- Serve warm over pasta, with crusty bread, or on a bed of greens.
Notes
Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. Adjust seasoning while cooking for the best flavor.
