Ingredients

  • 4 boneless chicken thighs or breasts
  • 1 can (28 oz) crushed tomatoes
  • 4 cloves garlic, minced
  • 1 large sweet onion, chopped
  • 12 tsp red pepper flakes (adjust to taste)
  • 2 tbsp olive oil
  • 1/2 cup white wine (optional)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and cook until soft and translucent.
  2. Stir in garlic and red pepper flakes, cooking until fragrant.
  3. Season chicken with salt and pepper, then add to the skillet and sear on one side until golden brown.
  4. Flip chicken and pour in crushed tomatoes and white wine. Stir to combine, scraping up brown bits from the pan.
  5. Bring sauce to a boil, then reduce heat and let simmer for 25-30 minutes.
  6. Before serving, stir in fresh basil and parsley, adjusting seasoning as desired.
  7. Serve warm over pasta, with crusty bread, or on a bed of greens.
