Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

- Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, whisk together heavy cream, egg, and peppermint extract.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Fold in the white chocolate chips.
- Turn the dough onto a floured surface and gently knead until combined, then shape into a 1-inch thick circle.
- Cut into wedges or use a round cutter to shape.
- Place on the prepared baking sheet and brush tops with additional cream.
- Bake for 15-20 minutes until golden brown and fragrant.
- Let cool slightly before serving.
