Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and powdered sugar in a large mixing bowl until light and fluffy.
- In a separate bowl, whisk together the flour, salt, and chopped pecans.
- Gradually add the dry mixture to the butter-sugar blend, mixing until just combined.
- Stir in the peppermint oil and vanilla extract.
- Roll the dough into small balls, about 1 inch in diameter, and place on a lined baking sheet.
- Bake for 10-12 minutes or until the bottoms just start to turn golden.
- Let cool for 5 minutes before dusting with powdered sugar and transfer to a wire rack to cool completely.
Notes
For a dairy-free option, substitute butter with coconut oil. Make sure to chill the dough for 30 minutes if possible to improve the texture.
