Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and powdered sugar in a large mixing bowl until light and fluffy.
  3. In a separate bowl, whisk together the flour, salt, and chopped pecans.
  4. Gradually add the dry mixture to the butter-sugar blend, mixing until just combined.
  5. Stir in the peppermint oil and vanilla extract.
  6. Roll the dough into small balls, about 1 inch in diameter, and place on a lined baking sheet.
  7. Bake for 10-12 minutes or until the bottoms just start to turn golden.
