Instructions
- Preheat the oven to 200°F (100°C) and line two baking sheets with parchment paper.
- In a clean mixing bowl, beat room temperature egg whites and cream of tartar until foamy.
- Gradually add sugar, one tablespoon at a time, while beating until stiff peaks form and the mixture is glossy.
- Gently fold in peppermint extract and food coloring if using.
- Pipe small mounds onto prepared baking sheets, leaving space between each.
- Bake for 1.5 to 2 hours until dry to the touch and easily peel away from parchment.
- Turn off the oven and let them cool inside with the door ajar.
- Serve immediately or store in an airtight container.
Notes
Use pasteurized egg whites for safety and consider adding crushed candy canes for decoration.
