  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 24 semi-sweet chocolate kisses

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the peppermint extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually blend this into the wet ingredients until just combined.
  5. Scoop rounded tablespoonfuls of dough and roll them into balls, placing them on the prepared baking sheets with enough space for spreading.
  6. Bake for 10-12 minutes until slightly undercooked in the center.
  7. Remove from the oven and press a chocolate kiss into the center of each cookie. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack.
