- 2 cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 tsp peppermint extract
- 1 tsp baking soda
- ½ tsp salt
- 24 semi-sweet chocolate kisses
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the peppermint extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually blend this into the wet ingredients until just combined.
- Scoop rounded tablespoonfuls of dough and roll them into balls, placing them on the prepared baking sheets with enough space for spreading.
- Bake for 10-12 minutes until slightly undercooked in the center.
- Remove from the oven and press a chocolate kiss into the center of each cookie. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack.
