Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the butter and sugars in a large bowl until light and fluffy.
  3. Add the eggs one at a time and then stir in the peppermint extract.
  4. In another bowl, whisk together the flour and baking powder. Gradually mix it into the wet mixture.
  5. Fold in the crushed candy canes.
  6. Scoop the dough onto the prepared baking sheet, leaving space between each biscuit.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra flavor, drizzle cooled biscuits with white chocolate and sprinkle with crushed candy canes.
