- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup toasted and chopped pecans
- 1/2 cup caramel (store-bought or homemade)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugar in a large mixing bowl until light and fluffy.
- Add in the vanilla and flour gradually, mixing until combined. Fold in the chopped pecans.
- Roll into balls about one inch in diameter and place them on the prepared baking sheet, leaving space between each.
- Press your thumb in the center of each dough ball to create a well for the caramel.
- Bake for 12-15 minutes until the edges are golden, but the centers are still soft.
- Remove from the oven and fill each thumbprint with warm caramel. Allow to cool before transferring to a wire rack.
Notes
For a dairy-free alternative, use coconut oil instead of butter. Try substituting pecans with walnuts or almonds if desired.
