Description

A delightful salad featuring sweet pears, tangy blue cheese, and a flavorful shallot vinaigrette, perfect for any occasion.

Ingredients

Scale
  • Fresh mixed greens (arugula and spinach)
  • 2 ripe pears (Bartlett or Bosc)
  • 4 oz blue cheese (crumbled or sliced)
  • 2 shallots (minced)
  • 1/4 cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley)
  • 1/2 cup nuts (walnuts, pecans, or almonds)

Instructions

  1. Wash and dry the greens thoroughly.
  2. Slice the pears into wedges or bite-sized pieces.
  3. In a small bowl, whisk together minced shallots, olive oil, Dijon mustard, salt, and pepper. Let sit for a few minutes.
  4. In a large salad bowl, combine the greens, pear slices, blue cheese, and chopped nuts.
  5. Just before serving, drizzle the shallot vinaigrette over the salad and toss gently.

Notes

To enhance the flavor, toast the nuts in a skillet over medium heat until fragrant. Consider chilling the salad for 15 minutes before serving to allow flavors to meld.
