Description
A unique dessert combining ripe peaches and fragrant oolong tea layered with mascarpone cheese for a delightful twist on traditional tiramisu.

- 3 ripe peaches, sliced
- 2 cups oolong tea, brewed strong
- 1 package ladyfingers
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 3 egg yolks
- 1/2 cup sugar
- 1 cup brewed espresso or strong coffee
Instructions
- Brew a strong cup of oolong tea and steep for 10 minutes.
- Whip the heavy cream in a bowl until soft peaks form and set aside.
- Beat together the mascarpone cheese, sugar, and egg yolks until smooth.
- Fold the whipped cream gently into the mascarpone mixture until incorporated.
- Slice the peaches into thin wedges or cubes, saving some for garnish.
- Combine brewed oolong tea and coffee in a shallow dish. Dip each ladyfinger briefly into the mixture.
- Layer in a dish: add dipped ladyfingers, half of the mascarpone mixture, and a layer of peaches. Repeat.
- Finish with a final layer of mascarpone and sprinkle cocoa powder or matcha on top.
- Refrigerate for at least 4 hours, preferably overnight.
Notes
For a vegan option, try coconut cream instead of mascarpone and use aquafaba for a mousse-like consistency.
