Description

A unique dessert combining ripe peaches and fragrant oolong tea layered with mascarpone cheese for a delightful twist on traditional tiramisu.


Ingredients

  • 3 ripe peaches, sliced
  • 2 cups oolong tea, brewed strong
  • 1 package ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 3 egg yolks
  • 1/2 cup sugar
  • 1 cup brewed espresso or strong coffee

Instructions

  1. Brew a strong cup of oolong tea and steep for 10 minutes.
  2. Whip the heavy cream in a bowl until soft peaks form and set aside.
  3. Beat together the mascarpone cheese, sugar, and egg yolks until smooth.
  4. Fold the whipped cream gently into the mascarpone mixture until incorporated.
  5. Slice the peaches into thin wedges or cubes, saving some for garnish.
  6. Combine brewed oolong tea and coffee in a shallow dish. Dip each ladyfinger briefly into the mixture.
  7. Layer in a dish: add dipped ladyfingers, half of the mascarpone mixture, and a layer of peaches. Repeat.
  8. Finish with a final layer of mascarpone and sprinkle cocoa powder or matcha on top.
  9. Refrigerate for at least 4 hours, preferably overnight.

Notes

For a vegan option, try coconut cream instead of mascarpone and use aquafaba for a mousse-like consistency.
