- 12 oz Pappardelle Pasta
- 2–3 Calabrian Chili Peppers (or crushed red pepper flakes)
- 1 lb Italian Sausage (sweet or spicy)
- 2 tbsp Olive Oil
- 4 cloves Fresh Garlic, minced
- 1 can (15 oz) Tomato Sauce or Puree
- Fresh Herbs (Parsley or Basil), for garnish
- Grated Parmesan Cheese, for serving
Instructions
- Prepare the Pappardelle: In a large pot, bring salted water to a boil. Add the pappardelle and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the rest.
- Sauté the Sausage: In a large skillet over medium heat, drizzle in some olive oil. Add the Italian sausage, breaking it into crumbles. Sauté until browned and cooked through.
- Build the Sauce: To the same skillet, add minced garlic and Calabrian chili peppers. Sauté for about a minute until fragrant, then pour in the tomato sauce. Allow it to simmer for about 10 minutes.
- Combine: Toss the drained pappardelle directly into the sauce. Mix gently to incorporate, using reserved pasta water to adjust consistency as needed.
- Serve: Plate the pappardelle and garnish with freshly chopped herbs and a sprinkle of parmesan cheese before serving warm.
Notes
Always taste and adjust seasoning as needed. Don’t rinse pasta after cooking to keep the sauce clinging well.
