- 1 cup fresh strawberries, chopped
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 large egg
- 1/2 cup whole milk
- 1/4 cup melted butter, cooled
- 1/2 cup fresh orange juice
- 1 tablespoon orange zest
- 1/2 teaspoon cinnamon (optional)
- For the Streusel: 1/4 cup sugar, 1/4 cup flour, 2 tablespoons cold butter
Instructions
- Preheat your oven to 375°F (190°C).
- Grease your muffin tin or line with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and cinnamon.
- In a separate bowl, beat the egg, then add milk, melted butter, orange juice, and zest. Mix until just combined.
- Pour the wet mixture into the dry ingredients and stir gently until moistened.
- Fold in the chopped strawberries until evenly distributed.
- In a small bowl, mix together the sugar, flour, and cold butter with your fingertips until crumbly for the streusel.
- Spoon the batter into muffin cups, filling about 2/3 full, and top with the streusel mixture.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow muffins to cool for a few minutes before transferring to a wire rack.
Notes
For a dairy-free version, substitute milk with almond or oat milk and non-dairy butter.
