Description

Delicious muffins bursting with the flavors of fresh strawberries and zesty oranges, topped with a buttery streusel crumble.


Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1/2 cup whole milk
  • 1/4 cup melted butter, cooled
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1/2 teaspoon cinnamon (optional)
  • For the Streusel: 1/4 cup sugar, 1/4 cup flour, 2 tablespoons cold butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease your muffin tin or line with paper liners.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and cinnamon.
  4. In a separate bowl, beat the egg, then add milk, melted butter, orange juice, and zest. Mix until just combined.
  5. Pour the wet mixture into the dry ingredients and stir gently until moistened.
  6. Fold in the chopped strawberries until evenly distributed.
  7. In a small bowl, mix together the sugar, flour, and cold butter with your fingertips until crumbly for the streusel.
  8. Spoon the batter into muffin cups, filling about 2/3 full, and top with the streusel mixture.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Allow muffins to cool for a few minutes before transferring to a wire rack.

Notes

For a dairy-free version, substitute milk with almond or oat milk and non-dairy butter.
