Description

Delightful shortbread cookies featuring the bright flavors of orange and the sweet-tart burst of dried cranberries, perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 tablespoon freshly grated orange zest
  • 1 cup dried cranberries
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, beat together the butter and sugar until light and fluffy (about 3–5 minutes).
  3. Stir in orange zest and vanilla extract until well combined.
  4. Fold in the flour and salt until just blended.
  5. Gently incorporate dried cranberries into the dough.
  6. Shape dough into small balls or log shapes.
  7. Chill the dough in the fridge for 30 minutes (optional but recommended).
  8. Place on a parchment-lined baking sheet and bake for 12–15 minutes, or until golden around the edges.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For perfect texture, use room temperature ingredients and do not over-mix the dough. Chilling the dough helps maintain the cookie’s shape.
