Ingredients
Scale
- 1 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 tablespoon freshly grated orange zest
- 1 cup dried cranberries
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, beat together the butter and sugar until light and fluffy (about 3–5 minutes).
- Stir in orange zest and vanilla extract until well combined.
- Fold in the flour and salt until just blended.
- Gently incorporate dried cranberries into the dough.
- Shape dough into small balls or log shapes.
- Chill the dough in the fridge for 30 minutes (optional but recommended).
- Place on a parchment-lined baking sheet and bake for 12–15 minutes, or until golden around the edges.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For perfect texture, use room temperature ingredients and do not over-mix the dough. Chilling the dough helps maintain the cookie’s shape.
