- 2 eggs
- 1 cup buttermilk (or yogurt)

- Vegetable oil for frying
Instructions
- Slice onions into rings about ¼ inch thick and separate the rings gently.
- In a large bowl, mix buttermilk and a pinch of salt. Submerge onion rings and soak for 30 minutes to an hour.
- In another bowl, combine flour, cornstarch, paprika, garlic powder, salt, and pepper.
- In a separate bowl, beat the eggs until smooth.
- Dip each onion ring first in the egg mixture and then in the flour mixture to coat.
- Heat oil in a deep skillet over medium-high heat.
- Fry onion rings in batches until golden brown, about 3-4 minutes per side.
- Transfer to paper towels to drain excess oil and serve immediately.
Notes
For a healthier option, try baking the onion rings at 425°F for 20-25 minutes, flipping halfway through, and spray with oil for crispiness.
