Instructions

  1. Slice onions into rings about ¼ inch thick and separate the rings gently.
  2. In a large bowl, mix buttermilk and a pinch of salt. Submerge onion rings and soak for 30 minutes to an hour.
  3. In another bowl, combine flour, cornstarch, paprika, garlic powder, salt, and pepper.
  4. In a separate bowl, beat the eggs until smooth.
  5. Dip each onion ring first in the egg mixture and then in the flour mixture to coat.
  6. Heat oil in a deep skillet over medium-high heat.
  7. Fry onion rings in batches until golden brown, about 3-4 minutes per side.
  8. Transfer to paper towels to drain excess oil and serve immediately.
