Description

A comforting and versatile One-Pot Spaghetti that brings family together with rich, garlicky flavors.

Ingredients

Scale
  • 12 oz spaghetti
  • 4 cups vegetable or chicken broth
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons olive oil
  • 8 oz crimini or button mushrooms, sliced
  • Salt and pepper to taste
  • Fresh or dried herbs (basil, thyme, or oregano)
  • Grated Parmesan cheese for serving
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté minced garlic until fragrant.
  2. Add sliced mushrooms and cook until golden brown, about 5 minutes.
  3. Incorporate diced tomatoes and broth, stirring to combine, and bring to a gentle boil.
  4. Add spaghetti to the boiling mixture, pushing it down to submerge.
  5. Season with salt, pepper, and herbs. Reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
  6. Once spaghetti is cooked to your liking, remove from heat and let sit for a few minutes.
  7. Serve with grated Parmesan cheese and torn basil leaves.

Notes

Stir frequently to prevent clumping and ensure even cooking. Cool and store leftovers in an airtight container for up to three days.
