One-Pot Corn & Potato Chowder

Description

A comforting, creamy chowder made with fresh corn and potatoes, perfect for cozy gatherings.


Ingredients

  • 3 cups fresh corn kernels (or frozen corn)
  • 4 medium Yukon Gold potatoes, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or milk (or coconut milk for dairy-free)
  • 2 tablespoons butter
  • Fresh herbs (thyme, parsley, or green onions)
  • Salt and pepper to taste

Instructions

  1. In a large stockpot, melt the butter over medium heat. Add the onions and garlic, and sauté until translucent, about 5 minutes.
  2. Stir in corn and diced potatoes, cooking for another 5 minutes.
  3. Add the broth to the pot. Bring to a gentle boil and then simmer, covered, for 15-20 minutes until the potatoes are tender.
  4. Stir in the heavy cream or milk, or coconut milk if using.
  5. Add salt, pepper, and fresh herbs to taste. Serve in bowls and garnish with additional herbs or cream, if desired.
  6. If you want to add protein, consider stirring in cooked bacon or shredded chicken before serving.

Notes

Use fresh ingredients for the best flavor. Feel free to add leftover vegetables for variety.
