- 1 pound boneless chicken (breast or thighs)
- 1 cup long-grain white rice
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 2 cups chicken broth
- 1 cup tomato sauce
- 1 cup peas (fresh or frozen)
- Olive oil
- Lime juice (to taste)
Instructions
- In a skillet, heat olive oil over medium heat. Add diced onions and minced garlic, cooking until fragrant and translucent, about 3 minutes.
- Add bite-sized pieces of chicken. Season with cumin, chili powder, salt, pepper, and lime juice. Cook until golden brown, around 7-8 minutes.
- Stir in uncooked rice, ensuring it’s coated with spices.
- Add tomato sauce, chicken broth, and any remaining veggies. Bring to a gentle boil.
- Reduce heat, cover, and let simmer for 20-25 minutes until rice is tender and liquid is absorbed.
- Once cooked, fold in peas and fresh cilantro. Fluff rice with a fork and add extra lime juice before serving.
Notes
Let the dish sit for a few minutes after cooking to allow flavors to meld. Adjust seasonings to taste!
