  • 1 cup long-grain white rice
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 2 cups chicken broth
  • 1 cup tomato sauce
  • 1 cup peas (fresh or frozen)
  • Olive oil
  • Lime juice (to taste)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced onions and minced garlic, cooking until fragrant and translucent, about 3 minutes.
  2. Add bite-sized pieces of chicken. Season with cumin, chili powder, salt, pepper, and lime juice. Cook until golden brown, around 7-8 minutes.
  3. Stir in uncooked rice, ensuring it’s coated with spices.
  4. Add tomato sauce, chicken broth, and any remaining veggies. Bring to a gentle boil.
  5. Reduce heat, cover, and let simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  6. Once cooked, fold in peas and fresh cilantro. Fluff rice with a fork and add extra lime juice before serving.

Notes

Let the dish sit for a few minutes after cooking to allow flavors to meld. Adjust seasonings to taste!
