Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 2 lbs potatoes (Yukon Gold or baby potatoes)
  • 8 oz feta cheese, crumbled
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Optional: olives or sun-dried tomatoes
  • Optional: fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. In another bowl, combine the potatoes with olive oil, salt, and a pinch of herbs.
  4. Layer the marinated chicken and potatoes in a large oven-safe skillet.
  5. Crumble feta cheese over the top and sprinkle with additional herbs.
  6. Bake for 35-45 minutes until chicken is cooked through (internal temperature of 165°F/75°C) and potatoes are tender.
  7. Let the dish rest for a few minutes before serving. Garnish with fresh parsley and serve with a slice of lemon.

Notes

For a vegetarian version, substitute chicken with mushrooms or roasted eggplant. The dish can be stored in an airtight container for up to 3 days, or frozen before cooking for up to 3 months.
