- 1.5 lbs boneless skinless chicken breasts or thighs
- 2 lbs potatoes (Yukon Gold or baby potatoes)
- 8 oz feta cheese, crumbled
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper, to taste
- Optional: olives or sun-dried tomatoes
- Optional: fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper.
- In another bowl, combine the potatoes with olive oil, salt, and a pinch of herbs.
- Layer the marinated chicken and potatoes in a large oven-safe skillet.
- Crumble feta cheese over the top and sprinkle with additional herbs.
- Bake for 35-45 minutes until chicken is cooked through (internal temperature of 165°F/75°C) and potatoes are tender.
- Let the dish rest for a few minutes before serving. Garnish with fresh parsley and serve with a slice of lemon.
Notes
For a vegetarian version, substitute chicken with mushrooms or roasted eggplant. The dish can be stored in an airtight container for up to 3 days, or frozen before cooking for up to 3 months.
