Ingredients

  • 2 cups pitted cherries (fresh or canned)
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine cherries, ½ cup of sugar, and 1 tablespoon of flour; set aside.
  3. Cream together butter and 1 cup of sugar until fluffy. Add eggs one at a time, then stir in vanilla.
  4. Mix in flour and baking powder until just combined.
  5. Press half of the dough into the pan, spread with cherry filling, then crumble remaining dough on top.
  6. Bake for 35-40 minutes until golden brown and filling bubbles.
  7. Cool for at least 20 minutes before slicing and serving.

Notes

For a twist, use frozen cherries instead of fresh; ensure they are thawed and drained well. Serve warm with ice cream or chilled with powdered sugar.
