- 4 ripe peaches, peeled and pitted
- 2 cups Greek yogurt (full-fat or low-fat)
- 1 tablespoon honey or maple syrup (adjust to taste)
- 2 tablespoons fresh lemon juice
- 1 teaspoon pure vanilla extract
Instructions
- Prepare the peaches by peeling and pitting, then cut them into chunks.
- In a blender, combine peach chunks, Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract.
- Blend until completely smooth.
- Taste and adjust sweetness or add more lemon if desired.
- Pour the mixture into ice cream molds, paper cups, or an 8×8-inch baking dish.
- Insert popsicle sticks and freeze for at least 4-6 hours or until solid.
- Once frozen, run the molds under warm water to release the bars. Enjoy immediately or store in the freezer.
