Ingredients

  • 4 ripe peaches, peeled and pitted
  • 2 cups Greek yogurt (full-fat or low-fat)
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the peaches by peeling and pitting, then cut them into chunks.
  2. In a blender, combine peach chunks, Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract.
  3. Blend until completely smooth.
  4. Taste and adjust sweetness or add more lemon if desired.
  5. Pour the mixture into ice cream molds, paper cups, or an 8×8-inch baking dish.
  6. Insert popsicle sticks and freeze for at least 4-6 hours or until solid.
  7. Once frozen, run the molds under warm water to release the bars. Enjoy immediately or store in the freezer.
