Ingredients

  • 2 cups fresh mango purée
  • 2 cups heavy cream
  • 1 tablespoon unflavored gelatin
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup cold water

Instructions

  1. In a small bowl, sprinkle the gelatin over cold water and let it bloom for five minutes.
  2. Puree the ripe mangoes in a blender until smooth.
  3. In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves; do not let it boil.
  4. Remove the cream mixture from heat, and stir in the bloomed gelatin until completely dissolved. Add in the mango purée and vanilla extract, mixing well.
  5. Pour the mixture into individual ramekins or cups. Cover and refrigerate for at least four hours, or until set.
  6. Garnish with fresh mango slices or mint leaves before serving.

Notes

Ensure the gelatin blooms properly for best texture. Strain the mango purée if necessary for a super smooth finish.
