- 2 cups fresh mango purée
- 2 cups heavy cream
- 1 tablespoon unflavored gelatin
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup cold water
Instructions
- In a small bowl, sprinkle the gelatin over cold water and let it bloom for five minutes.
- Puree the ripe mangoes in a blender until smooth.
- In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves; do not let it boil.
- Remove the cream mixture from heat, and stir in the bloomed gelatin until completely dissolved. Add in the mango purée and vanilla extract, mixing well.
- Pour the mixture into individual ramekins or cups. Cover and refrigerate for at least four hours, or until set.
- Garnish with fresh mango slices or mint leaves before serving.
Notes
Ensure the gelatin blooms properly for best texture. Strain the mango purée if necessary for a super smooth finish.
