Instructions
- Combine graham cracker crumbs with melted butter until it resembles wet sand. Press firmly into the bottom of mini mason jars or cupcake liners.
- In a large bowl, beat cream cheese until smooth. Gradually mix in powdered sugar, vanilla extract, and sour cream until silky.
- In another bowl, whip heavy cream until soft peaks form and gently fold into the cream cheese mixture.
- Spoon filling over crusts and smooth the tops. Refrigerate for at least 4 hours or overnight.
- Top with fresh berries, whipped cream, or chocolate/caramel sauce just before serving.
Notes
For a lighter option, substitute sour cream with Greek yogurt. Ensure cheesecakes chill adequately for the best texture.
