No Bake Apple Pie Cheesecake

Description

A delightful and creamy no-bake cheesecake infused with the flavors of spiced apples and topped with caramel glaze.


Ingredients

  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1 cup whipped cream
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 23 fresh apples (Granny Smith or Honeycrisp), diced
  • 1 tsp cinnamon
  • 1/4 cup caramel sauce, for drizzling

Instructions

  1. Prepare the crust by crushing the graham crackers and mixing with melted butter and sugar. Press into the bottom of a springform pan.
  2. In a mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth, then gently fold in the whipped cream.
  3. Dice apples and fold into the cheesecake filling. Optional: sauté them in butter with sugar and cinnamon.
  4. Pour half of the cheesecake filling over the crust, layer with sautéed apples if desired, then top with remaining filling.
  5. Cover and refrigerate for at least 4 hours, preferably overnight.
  6. Drizzle with caramel sauce and garnish with sliced almonds before serving.

Notes

For a lighter version, use Greek yogurt instead of cream cheese. Almond flour can also be used for a gluten-free crust.
