- 2 tablespoons Native pepperberry
- 2 cloves Garlic, minced
- 2 tablespoons Olive oil

Instructions
- Remove the ribeye from the refrigerator 30 minutes before cooking to bring it to room temperature. Pat dry with paper towels.
- In a small bowl, mix together the native pepperberry, minced garlic, salt, and olive oil until it reaches a paste-like consistency.
- Rub the spice mixture generously all over the ribeye, ensuring it is fully coated.
- Preheat a cast-iron skillet or grill to medium-high heat.
- Add a tablespoon of oil to the skillet and then place the ribeye in the pan, cooking without moving for about 4-5 minutes.
- Flip the steak and cook for another 4-5 minutes for medium-rare, or to desired doneness.
- Remove the ribeye from the skillet and let it rest for 5-10 minutes, tented with foil.
- Slice against the grain and serve with sautéed garlic mushrooms and roasted vegetables.
Notes
For added flavor, consider basting the steak with rendered fat during the last minute of cooking. Letting the steak rest is crucial for juiciness.
