Description

A delightful and easy banana cake that is rich, moist, and requires no mixer. Perfect for any occasion.

Ingredients

Scale
  • 3 ripe bananas
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup yogurt or sour cream
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Mash the ripe bananas with a fork until smooth in a large bowl.
  3. Whisk in the sugar, yogurt (or sour cream), eggs, and vanilla extract until well combined.
  4. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, and nutmeg. Mix these dry ingredients into the banana mixture until just combined.
  5. Pour the batter into the prepared baking pan, smoothing it out evenly.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean when inserted in the center.
  7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Keep an eye on the cake during the last few minutes of baking to avoid overbaking.
