- 3 ripe bananas, mashed
- 2 cups all-purpose flour (or half whole wheat for added fiber)
- 1 cup brown sugar (or white sugar if necessary)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/2 cup vegetable oil (or melted coconut oil or unsweetened applesauce)
- 2 large eggs (or flax/chia eggs for an egg substitute)
- 2 teaspoons vanilla extract
- 8 oz cream cheese (for frosting), softened
- 1 cup powdered sugar (for frosting)
- Milk (for frosting, as needed)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish, or line it with parchment paper.
- Mash the bananas in a large bowl until smooth.
- Stir in the vegetable oil, brown sugar, vanilla, and eggs until well blended.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, folding gently until just incorporated.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
- Prepare the frosting by beating together the cream cheese and powdered sugar, adding milk to reach the desired consistency.
- Once the cake is completely cool, frost it generously and slice into squares.

Serve warm with vanilla ice cream or a dollop of whipped cream topped with fresh berries for a delightful treat.
