- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 1/2 cups heavy cream
- 1/4 cup espresso or strong coffee
- 3/4 cup semisweet or dark chocolate, chopped
- 3/4 cup granulated sugar
- 3 egg yolks
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and prepare the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into a pie dish and bake for 10 minutes. Let cool.
- In a saucepan over medium heat, combine heavy cream, espresso, and sugar. Whisk until dissolved and heated, then remove from heat and add chocolate and butter until melted.
- In a bowl, whisk egg yolks until light, then temper with the warm chocolate mixture. Combine back in the saucepan and stir until thickened, about 5-7 minutes over medium-low heat.
- Pour chocolate filling into cooled crust and refrigerate for at least 4 hours or overnight.
- Before serving, whip remaining heavy cream with sugar and vanilla, then spread over the pie. Garnish with chocolate shavings if desired.
Notes
For a gluten-free version, use crushed nuts or gluten-free cookies for the crust. Can substitute with milk chocolate for a sweeter taste or dairy-free chocolate for a vegan option.
