- 8 oz cream cheese, softened
- 1 cup canned crushed pineapple, drained
- 1 cup dried cranberries, chopped
- 1/2 cup powdered sugar
- 1/2 cup pecans, crushed
- 1 tsp vanilla extract
Instructions
- In a mixing bowl, combine softened cream cheese, crushed pineapple, dried cranberries, and powdered sugar. Mix until well-blended.
- Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
- While the mixture chills, chop the pecans into small pieces.
- Once chilled, scoop out portions of the mixture and roll them into bite-sized balls.
- Roll each ball in the crushed pecans until fully coated.
- Refrigerate until ready to serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to a week. Can also be frozen for up to three months.
