Ingredients

  • 8 oz cream cheese, softened
  • 1 cup canned crushed pineapple, drained
  • 1 cup dried cranberries, chopped
  • 1/2 cup powdered sugar
  • 1/2 cup pecans, crushed
  • 1 tsp vanilla extract

Instructions

  1. In a mixing bowl, combine softened cream cheese, crushed pineapple, dried cranberries, and powdered sugar. Mix until well-blended.
  2. Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
  3. While the mixture chills, chop the pecans into small pieces.
  4. Once chilled, scoop out portions of the mixture and roll them into bite-sized balls.
  5. Roll each ball in the crushed pecans until fully coated.
  6. Refrigerate until ready to serve.
