  • 1/4 cup powdered sugar

  • 1/2 cup unsalted butter, chilled
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tsp lemon zest
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Cut in chilled butter until it resembles coarse crumbs.
  3. Add a bit of cold water until the dough comes together.
  4. Roll out the dough and cut into circles to fit tartlet pans, pressing gently into the pans.
  5. Pre-bake crusts for about 10 minutes or until golden.
  6. In a saucepan, whisk together eggs, sugar, lemon juice, and zest over medium heat. Stir constantly until thickened, about 10 minutes.
  7. Remove from heat and whisk in butter until smooth.
  8. Fill pre-baked tart shells with lemon curd and bake again for another 10 minutes.
  9. Cool completely before serving. Dust with powdered sugar if desired.
