- 1/4 cup powdered sugar

- 1/2 cup unsalted butter, chilled
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 tsp lemon zest
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and salt. Cut in chilled butter until it resembles coarse crumbs.
- Add a bit of cold water until the dough comes together.
- Roll out the dough and cut into circles to fit tartlet pans, pressing gently into the pans.
- Pre-bake crusts for about 10 minutes or until golden.
- In a saucepan, whisk together eggs, sugar, lemon juice, and zest over medium heat. Stir constantly until thickened, about 10 minutes.
- Remove from heat and whisk in butter until smooth.
- Fill pre-baked tart shells with lemon curd and bake again for another 10 minutes.
- Cool completely before serving. Dust with powdered sugar if desired.
