Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 1/2 cup fresh key lime juice
  • 1 can (14 oz) sweetened condensed milk
  • 3 egg yolks
  • Fresh whipped cream for topping
  • Lime wedges for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers, melted butter, and sugar.
  3. Press the mixture into mini muffin tins or individual tartlet pans and bake for 8–10 minutes until golden brown. Cool completely.
  4. In another bowl, whisk together key lime juice, sweetened condensed milk, and egg yolks until well combined.
  5. Spoon the filling into the cooled crusts, filling each about three-quarters full, and bake for an additional 15 minutes until set but slightly jiggly.
  6. Allow to cool at room temperature, then refrigerate for at least two hours.
  7. Top with whipped cream and a lime wedge before serving.

Notes

Avoid overmixing the filling and watch the baking time to prevent burning.
