- 1 cup crushed graham crackers
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
- 1/2 cup fresh key lime juice
- 1 can (14 oz) sweetened condensed milk
- 3 egg yolks
- Fresh whipped cream for topping
- Lime wedges for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine crushed graham crackers, melted butter, and sugar.
- Press the mixture into mini muffin tins or individual tartlet pans and bake for 8–10 minutes until golden brown. Cool completely.
- In another bowl, whisk together key lime juice, sweetened condensed milk, and egg yolks until well combined.
- Spoon the filling into the cooled crusts, filling each about three-quarters full, and bake for an additional 15 minutes until set but slightly jiggly.
- Allow to cool at room temperature, then refrigerate for at least two hours.
- Top with whipped cream and a lime wedge before serving.
Notes
Avoid overmixing the filling and watch the baking time to prevent burning.
