Delicious bite-sized beef wellingtons filled with earthy mushrooms, garlic, and wrapped in flaky puff pastry.
Ingredients

- 1 lb Beef Tenderloin
- 8 oz Mushrooms (button, cremini, or shiitake)
- 2 cloves Garlic, minced
- 2 tbsp Fresh Herbs (thyme and parsley)
- 1 sheet Puff Pastry
- 1 Egg (for egg wash)
- 1 tbsp Dijon Mustard
Instructions
- Prepare the Filling: In a skillet, heat butter over medium heat. Add chopped mushrooms and a pinch of salt, cooking until they release moisture and turn golden brown. Stir in minced garlic and fresh herbs. Let cool.
- Sear the Beef: Heat a pan with oil and sear the beef for 2-3 minutes on each side until browned. Remove from heat and spread Dijon mustard over the beef.
- Assemble the Bites: Roll out pastry dough, cut into squares, place mushroom mixture and a strip of beef in the center, wrap the pastry around and seal with egg wash.
- Place the wrapped bites on a parchment-lined baking sheet, brush with egg wash and sprinkle with salt.
- Bake: Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown. Serve warm!
Notes
Ensure ingredients are at room temperature for better flavor absorption, and do not overcook the beef.
