- 2 cups cooked chicken (boneless breasts or thighs, shredded)
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 cup fresh mushrooms, chopped
- 1 cup diced onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 cup seasoned breadcrumbs or crushed buttery crackers
- 2 tablespoons melted butter
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Instructions
- Cook the chicken by grilling, baking, or sautéing until fully cooked. If using leftovers, shred or chop into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat. Add diced onions and chopped mushrooms, sautéing until softened and browned.
- In a large bowl, mix together the cooked chicken, sautéed vegetables, cream of chicken soup, and sour cream. Stir in spices and fresh herbs.
- In a separate bowl, combine breadcrumbs or crushed crackers with melted butter and a sprinkle of cheese.
- Pour the chicken mixture into a greased baking dish and spread evenly. Top with the breadcrumb mixture and additional cheese if desired.
- Preheat the oven to 350°F (175°C) and bake for 25-30 minutes, until the topping is golden and the casserole is bubbly.
- Let cool for a few minutes before serving and enjoy!
