Description

A comforting and flavorful Middle Eastern stew featuring tender chicken, creamy white beans, and aromatic spices.


Ingredients

  • 4 Chicken thighs or breasts
  • 2 cups White beans (canned or dried)
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tsp Cumin
  • 2 tsp Coriander
  • 1/2 tsp Cinnamon
  • 1 can Diced tomatoes
  • 4 cups Chicken broth
  • 1/4 cup Fresh parsley or cilantro (chopped)
  • 2 tbsp Olive oil

Instructions

  1. Heat olive oil over medium heat in a large skillet.
  2. Sauté chopped onion until translucent, then add minced garlic and stir until fragrant.
  3. Add sliced chicken pieces and brown on all sides for 5-7 minutes.
  4. Incorporate spices (cumin, coriander, cinnamon) and stir well to coat the chicken.
  5. Add diced tomatoes and chicken broth; let simmer for 15 minutes.
  6. Toss in white beans and cook for an additional 10-15 minutes.
  7. Stir in freshly chopped herbs right before serving.

Notes

Serve over rice or with pita bread. Can be stored in the refrigerator for up to three days or frozen for later use.
