Ingredients

  • 2 lbs chicken thighs or drumsticks
  • 2 dried chipotle chiles
  • 2 dried guajillo chiles
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1/2 cup vinegar (apple cider or white)
  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 bay leaves
  • Salt to taste
  • Oil for browning

Instructions

  1. Marinate the chicken by seasoning generously with salt, cumin, and oregano, then refrigerate for at least 1 hour.
  2. Soak dried chiles in hot water for 15 minutes, then blend with garlic, onion, vinegar, tomato sauce, and spices until smooth.
  3. Heat oil in a skillet and brown the marinated chicken on all sides.
  4. Pour the adobo sauce over the chicken, cover, and simmer for 30-40 minutes until tender.
  5. Serve over rice with fresh cilantro and lime wedges.
