- 2 lbs chicken thighs or drumsticks
- 2 dried chipotle chiles
- 2 dried guajillo chiles
- 3 cloves garlic, minced
- 1 onion, chopped
- 1/2 cup vinegar (apple cider or white)
- 1 cup tomato sauce
- 1 tsp cumin
- 1 tsp oregano
- 2 bay leaves
- Salt to taste
- Oil for browning
Instructions
- Marinate the chicken by seasoning generously with salt, cumin, and oregano, then refrigerate for at least 1 hour.
- Soak dried chiles in hot water for 15 minutes, then blend with garlic, onion, vinegar, tomato sauce, and spices until smooth.
- Heat oil in a skillet and brown the marinated chicken on all sides.
- Pour the adobo sauce over the chicken, cover, and simmer for 30-40 minutes until tender.
- Serve over rice with fresh cilantro and lime wedges.
Notes
For best results, marinate chicken overnight. Adjust spice levels to your preference.
