- 1 cup corn (fresh, frozen, or canned)
- 1 bell pepper, chopped

- 1 cup cherry tomatoes, halved

- 1 avocado, diced
- 1–2 jalapeños, chopped (to taste)
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Rinse the black beans under cold water if using canned. Chop the bell peppers, onion, tomatoes, and jalapeños into bite-sized pieces. Finely chop the cilantro and dice the avocado just before mixing.
- Mix the ingredients: In a large mixing bowl, combine all the chopped vegetables, beans, and corn. Be gentle while mixing to keep the avocado intact.
- Make the dressing: In a small bowl, whisk together fresh lime juice, olive oil, salt, and pepper to taste.
- Combine and rest: Pour the dressing over the salad and gently toss. Allow the salad to sit for about 15 minutes at room temperature.
