- 12 egg whites
- 1 cup granulated sugar
- 1 cup cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 8 ounces dark chocolate (melted)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a bundt pan by spraying it lightly with cooking spray.
- In a large mixing bowl, beat 12 egg whites until soft peaks form.
- Gradually add 1 cup of granulated sugar, continuing to whip until stiff peaks form and the mixture becomes glossy.
- In another bowl, sift together 1 cup of cake flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
- Gently fold the dry ingredients into the egg whites, being careful not to deflate them.
- Stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract.
- For the molten lava center, melt 8 ounces of dark chocolate and fold it into the batter.
- Pour half of the batter into the prepared bundt pan, then add melted chocolate, and top with the remaining batter.
- Bake for 30-35 minutes or until the cake is golden brown and springs back when touched.
- Allow it to cool for 10 minutes before carefully inverting it onto a serving plate.
Notes
Serve warm for the best gooey center. Pair with whipped cream or ice cream for an extra treat.
