Description

A delightful and fluffy angel cake with a warm chocolate lava center, perfect for holiday gatherings.


Ingredients

  • 12 egg whites
  • 1 cup granulated sugar
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 8 ounces dark chocolate (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a bundt pan by spraying it lightly with cooking spray.
  2. In a large mixing bowl, beat 12 egg whites until soft peaks form.
  3. Gradually add 1 cup of granulated sugar, continuing to whip until stiff peaks form and the mixture becomes glossy.
  4. In another bowl, sift together 1 cup of cake flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
  5. Gently fold the dry ingredients into the egg whites, being careful not to deflate them.
  6. Stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract.
  7. For the molten lava center, melt 8 ounces of dark chocolate and fold it into the batter.
  8. Pour half of the batter into the prepared bundt pan, then add melted chocolate, and top with the remaining batter.
  9. Bake for 30-35 minutes or until the cake is golden brown and springs back when touched.
  10. Allow it to cool for 10 minutes before carefully inverting it onto a serving plate.

Notes

Serve warm for the best gooey center. Pair with whipped cream or ice cream for an extra treat.
