Ingredients

  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 cup whole milk
  • 1 to 1.5 cups fresh blueberries (or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. Cream together the unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture alternately with the milk, starting and ending with flour.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared cake pan and bake for 45-55 minutes until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for about 10 minutes before turning it onto a wire rack.

Notes

For added flavor, drizzle a simple glaze of powdered sugar and milk on top before serving.
