Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the spinach with a splash of olive oil and minced garlic until wilted.
- Mix in crumbled feta, herbs, salt, and pepper once the spinach cools.
- Prepare the puff pastry on a floured surface, rolling to about ¼ inch thickness.
- Fill each pastry piece with the spinach and feta mixture and seal the edges.
- Brush the tops with olive oil for a golden finish.
- Bake for 15-20 minutes until puffy and golden brown.
