  • 1 cup mushrooms (cremini or button), sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/2 cup green or Kalamata olives
  • 1/4 cup pine nuts
  • Juice of 1 lemon
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Prep your ingredients: Chop vegetables and dice the chicken.
  2. Heat the skillet: In a large skillet, heat olive oil over medium-high heat until it shimmers.
  3. Sauté the aromatics: Add minced garlic and diced onion; cook for 2-3 minutes until fragrant.
  4. Cook the chicken: Add the chicken in a single layer, seasoning with salt, pepper, and dried herbs; cook until browned and cooked through, about 6-8 minutes.
  5. Toss in the vegetables: Add bell peppers, zucchini, and mushrooms; stir-fry for 5-7 minutes.
  6. Finish with olives and nuts: Stir in olives and pine nuts; cook for another couple of minutes and squeeze lemon juice over the dish.
