- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup mushrooms (cremini or button), sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1/2 cup green or Kalamata olives
- 1/4 cup pine nuts
- Juice of 1 lemon
- Fresh parsley or cilantro, for garnish
Instructions
- Prep your ingredients: Chop vegetables and dice the chicken.
- Heat the skillet: In a large skillet, heat olive oil over medium-high heat until it shimmers.
- Sauté the aromatics: Add minced garlic and diced onion; cook for 2-3 minutes until fragrant.
- Cook the chicken: Add the chicken in a single layer, seasoning with salt, pepper, and dried herbs; cook until browned and cooked through, about 6-8 minutes.
- Toss in the vegetables: Add bell peppers, zucchini, and mushrooms; stir-fry for 5-7 minutes.
- Finish with olives and nuts: Stir in olives and pine nuts; cook for another couple of minutes and squeeze lemon juice over the dish.
- Serve with fresh herbs: Remove from heat, garnish with parsley or cilantro, and serve hot.
Notes
Feel free to use tofu or shrimp instead of chicken for variations. For a heartier meal, serve over quinoa or brown rice.
