  • 1 can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1 red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Begin by marinating the chicken: Mix olive oil, minced garlic, lemon juice, salt, and pepper. Let it sit for at least 30 minutes.
  2. While the chicken marinates, cook your couscous or quinoa according to package instructions, then fluff and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add your marinated chicken and sauté until golden and cooked through, about 7-8 minutes.
  4. Remove the chicken from the skillet and let it rest. In the same skillet, toss in diced onions and bell peppers, sautéing until slightly charred and tender.
  5. Add zucchini and cherry tomatoes, allowing them to mingle and soften for another 5 minutes.
  6. Stir in chickpeas and season with chopped fresh herbs.
  7. To assemble, scoop a generous serving of couscous or quinoa into a bowl, layer over the sautéed vegetables, and top with sliced chicken.
  8. Crumble feta cheese and drizzle lemon juice over the top for a beautiful finish.
