Description

A comforting and richly flavored Meat Pie with a flaky crust filled with ground meat and vegetables.


Ingredients

  • 1 lb ground beef (or lamb/chicken)
  • 1 pie crust (homemade or store-bought)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 1 cup peas
  • 1 cup beef or chicken stock
  • 1 tsp fresh thyme (or parsley)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the onions and garlic in olive oil over medium heat for about 5 minutes.
  3. Brown the ground meat in the skillet for about 7-10 minutes.
  4. Add the chopped carrots and peas, then pour in the stock.
  5. Mix in the salt, pepper, and herbs, and let it simmer for 10 minutes.
  6. Roll out the pie crust and fit half into a pie dish.
  7. Fill the crust with the meat mixture.
  8. Cover with the second sheet of pastry and seal the edges.
  9. Brush the top with egg wash and bake for 25-30 minutes until golden.
  10. Cool for a few minutes before slicing and serving.

Notes

Let the filling cool before assembling to prevent a soggy crust. Use a pie shield if needed to prevent over-browning.
