A comforting and richly flavored Meat Pie with a flaky crust filled with ground meat and vegetables.
Ingredients

- 1 lb ground beef (or lamb/chicken)
- 1 pie crust (homemade or store-bought)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 cup peas
- 1 cup beef or chicken stock
- 1 tsp fresh thyme (or parsley)
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- Sauté the onions and garlic in olive oil over medium heat for about 5 minutes.
- Brown the ground meat in the skillet for about 7-10 minutes.
- Add the chopped carrots and peas, then pour in the stock.
- Mix in the salt, pepper, and herbs, and let it simmer for 10 minutes.
- Roll out the pie crust and fit half into a pie dish.
- Fill the crust with the meat mixture.
- Cover with the second sheet of pastry and seal the edges.
- Brush the top with egg wash and bake for 25-30 minutes until golden.
- Cool for a few minutes before slicing and serving.
Notes
Let the filling cool before assembling to prevent a soggy crust. Use a pie shield if needed to prevent over-browning.
