- 1 cup pumpkin puree
- 2 eggs
- 1/2 cup milk (dairy or non-dairy)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp matcha powder
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
- In a mixing bowl, whisk together the pumpkin puree, eggs, milk, granulated sugar, and brown sugar until smooth.
- In a separate bowl, combine the all-purpose flour, matcha powder, baking powder, and baking soda; whisk until blended.
- Slowly add the dry ingredients to the wet mixture, folding gently.
- Fold in the white chocolate chips until evenly distributed.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
