- 6 tablespoons matcha powder
- 1 cup mascarpone cheese
- 24 ladyfingers
- 1 cup espresso or strong coffee, cooled
- 4 egg yolks
- ¼ cup sugar
- 1 cup whipping cream
- 2 tablespoons cocoa powder for dusting
Instructions
- Brew a strong cup of espresso and let it cool.
- In a mixing bowl, whip the cream until it forms stiff peaks; set aside.
- In another bowl, whisk together egg yolks and sugar until pale and frothy. Gently fold in the mascarpone until combined, then the whipped cream.
- In a separate bowl, mix matcha powder with a bit of hot water to create a smooth paste. Fold this into your mascarpone mixture.
- Quickly dip each ladyfinger into the espresso—don’t over-soak.
- In a dish, layer soaked ladyfingers, followed by a layer of the matcha mascarpone mixture. Repeat, ending with the mascarpone.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Dust cocoa powder on top before serving.
Notes
Make sure the mascarpone is at room temperature for easier blending. Avoid over-soaking the ladyfingers to maintain structure.
