Description

A unique twist on the classic tiramisu, featuring vibrant matcha powder, creamy mascarpone, and rich espresso.


Ingredients

  • 6 tablespoons matcha powder
  • 1 cup mascarpone cheese
  • 24 ladyfingers
  • 1 cup espresso or strong coffee, cooled
  • 4 egg yolks
  • ¼ cup sugar
  • 1 cup whipping cream
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. Brew a strong cup of espresso and let it cool.
  2. In a mixing bowl, whip the cream until it forms stiff peaks; set aside.
  3. In another bowl, whisk together egg yolks and sugar until pale and frothy. Gently fold in the mascarpone until combined, then the whipped cream.
  4. In a separate bowl, mix matcha powder with a bit of hot water to create a smooth paste. Fold this into your mascarpone mixture.
  5. Quickly dip each ladyfinger into the espresso—don’t over-soak.
  6. In a dish, layer soaked ladyfingers, followed by a layer of the matcha mascarpone mixture. Repeat, ending with the mascarpone.
  7. Cover and refrigerate for at least 4 hours, preferably overnight.
  8. Dust cocoa powder on top before serving.

Notes

Make sure the mascarpone is at room temperature for easier blending. Avoid over-soaking the ladyfingers to maintain structure.
