Ingredients
- Boneless chicken (breast or thighs)
- Chicken or vegetable broth
- Ramen or udon noodles
- Heavy cream or plant-based alternative
- Fresh shiitake or button mushrooms
- Minced garlic
- Ginger
- Fresh herbs (green onions, cilantro, or basil)
- Optional vegetables (carrots, bok choy, or spinach)
Instructions
- Season the chicken on both sides with salt and pepper.
- In a large skillet or pot, heat a little oil over medium heat. Add minced garlic and ginger; sauté until fragrant (1-2 minutes).
- Place the seasoned chicken in the skillet. Sear for 5 minutes on each side until golden brown, then remove it and let it rest.
- In the same skillet, add the broth and bring to a simmer. Stir in the heavy cream and adjust seasoning as needed.
- Add the noodles and cook according to package instructions (usually 3-4 minutes for ramen).
- Toss in sliced mushrooms just before noodles are done to soften in the broth.
- Slice the rested chicken into bite-sized pieces and add back to the broth.
- Incorporate fresh herbs and optional vegetables, cooking for an additional minute.
- Ladle ramen into bowls, distributing noodles, chicken, and broth, and top with extra herbs and chili flakes if desired.
