Instructions
- Preheat your oven to 400°F (200°C).
- Halve the squash, scoop out the seeds, and cut it into cubes.
- In a mixing bowl, combine maple syrup, miso paste, olive oil, salt, and pepper, mixing well.
- Add the cubed squash to the bowl, tossing until evenly coated.
- Spread the squash in a single layer on a parchment-lined baking sheet.
- Roast in the oven for about 25-30 minutes, flipping halfway through, until golden brown and tender.
- Garnish with sesame seeds and chopped scallions before serving.
Notes
Consider roasting garlic alongside the squash for added flavor. Avoid overcrowding the baking sheet to ensure proper roasting.
