  • Salt and Pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, combine maple syrup, Dijon mustard, minced garlic, olive oil, salt, and pepper. Whisk until well blended.
  2. Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or a shallow dish, and pour the marinade over it. Let it rest for at least 30 minutes.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C).
  4. Sear the Tenderloin: Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the marinated pork tenderloin, searing each side until browned, about 3-4 minutes per side.
  5. Roast in the Oven: Transfer the skillet or a baking dish with the tenderloin into the preheated oven. Roast for about 20-25 minutes until the internal temperature reaches 145°F (63°C).
  6. Rest the Meat: Remove the pork from the oven and let it rest for 5-10 minutes.
  7. Slice and Serve: Allow the tenderloin to cool slightly before slicing it into medallions. Drizzle with any remaining glaze.
