Ingredients

  • 1 lb spicy Italian sausage (or chicken/plant-based sausage)
  • 1 medium green cabbage, chopped
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (thyme, parsley) for garnish

Instructions

  1. Prep your space by gathering all your ingredients and chopping the cabbage, slicing the sausage, and mincing the garlic and onion.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant and onions are translucent, about 3–5 minutes.
  3. Push the onions and garlic to the side and add the sausage. Cook until browned, stirring occasionally.
  4. Add the chopped cabbage, season with salt, pepper, and herbs. Cook until the cabbage wilts, about 5–7 minutes.
  5. In a small bowl, whisk together maple syrup and Dijon mustard. Pour over the skillet mixture and stir to combine. Let simmer for an additional 3–4 minutes.
  6. Taste and adjust seasoning. Garnish with fresh herbs and serve warm.
