  • 1 cup pure maple syrup
  • 1/2 cup bourbon
  • 1/4 cup Dijon mustard
  • 1/2 cup brown sugar
  • 4 cloves fresh garlic, minced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine the maple syrup, bourbon, Dijon mustard, brown sugar, garlic, and black pepper, whisking until well combined.
  3. Score the ham’s surface in a diamond pattern.
  4. Baste the ham with half of the glaze, ensuring it’s well-coated.
  5. Tent the ham with aluminum foil and roast for 1 to 1.5 hours, basting every 20-30 minutes.
  6. Remove the foil in the last 30 minutes to caramelize.
  7. Check that the ham reaches an internal temperature of 140°F (60°C).
  8. Let it rest for 15 minutes before slicing and serving.

Notes

For an alcohol-free version, substitute bourbon with apple juice or a splash of vinegar. Ensure ham rests before slicing for optimal juiciness.
