Ingredients

  • 8 oz cream cheese, softened
  • 2 ripe mangoes, pureed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a lined baking pan (9×9 inches) and bake for 10 minutes.
  2. In a mixing bowl, beat cream cheese and sugar until smooth. Gradually add eggs, mixing well. Fold in mango puree and sour cream gently.
  3. Pour the filling over the cooled crust. Bake for 25-30 minutes until edges set, and center has a slight jiggle.
  4. Allow to cool to room temperature, then refrigerate for at least 4 hours before cutting into squares.

Notes

Serve chilled, preferably with whipped cream and fresh mango slices. Allow them to chill properly for the best flavor and texture.
