- 8 oz cream cheese, softened
- 2 ripe mangoes, pureed
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a lined baking pan (9×9 inches) and bake for 10 minutes.
- In a mixing bowl, beat cream cheese and sugar until smooth. Gradually add eggs, mixing well. Fold in mango puree and sour cream gently.
- Pour the filling over the cooled crust. Bake for 25-30 minutes until edges set, and center has a slight jiggle.
- Allow to cool to room temperature, then refrigerate for at least 4 hours before cutting into squares.
Notes
Serve chilled, preferably with whipped cream and fresh mango slices. Allow them to chill properly for the best flavor and texture.
