- 1/2 cup heavy cream
- 1/2 cup salted butter, cubed

Instructions
- Prepare the Potatoes: Peel and chop the Yukon Gold potatoes into even-sized chunks (about 1-2 inches) and rinse under cold water.
- Boil the Potatoes: Place potatoes in a pot, cover with cold water, add salt, and bring to a boil. Reduce heat and simmer for 15-20 minutes until tender.
- Roast the Garlic: Preheat oven to 375°F (190°C). Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes.
- Drain and Mash: Drain the cooked potatoes, return them to the pot, and allow to steam. Mash with a potato masher until smooth.
- Incorporate the Goodness: Squeeze roasted garlic into the mashed potatoes and mix in butter and heavy cream until creamy. Fold in fresh herbs.
- Season to Taste: Add salt and pepper, adjusting to preference.
